Van Straten Almond Tarts
Van Straten makes two versions of almond tarts, their basic almond tart and a deluxe version. The basic tart is a shortcrust base in a tin with almond paste filling topped with a white icing and a piece of glaze cherry. The deluxe version will remind some people of a Bakewell tart. The filling is softer and moister like a pudding. Under it is a pocket of raspberry jam and it is contained in a puff pastry shell. The icing on top is moister, too, so you teeth sink into it as opposed to needing to bite through it. The basic tarts are tasty treats but the deluxe lives up to its name. My father had an expression, “Good enough to kiss a fish wife for.” I will leave that image up to your imagination!
