Salmiak Filled Licorice
Salmiak is a salty flavoured compound (sal ammoniac; ammonium chloride) that is often used with licorice in making Northern European Zwart Wit candies. Zwart/Black refers the licorice. Wit/White refers to Salmiak:
Zwart Wit Kogels/Balls are wrapped hard brown candies filled with salmiak powder that will begin to seep out as the outer candy dissolves in your mouth.
Scheep’s Touw/Ship’s Rope are hard log shaped candies also filled with salmiak powder which will seep out. Those not familiar with the candy have learned the hard way that biting the candy might offer a stronger salt dose than expected or enjoyed.
Sip/Rounds are a black softer candy also filled with salmiak but not in a powdered form.
