What is the difference between Parmesan and Parmigiano-Reggiano? Parmesan is usually a pale North American imitation of a historic cheese made in Northern Italy.  Its name comes from the area it is made: the provinces of Parma, Reggio Emilia, the part of Bologna west of the Reno, and Modena; and the part of Mantua south of the Po River. This is a classic Italian hard, granular cheese, produced from cow’s milk and  aged 12-36 months.  Grate it over pasta, chicken and salads; Flavour your soups and risotto with it. Or just enjoy it on its own. $5.35/100 gram.
