Paella rice differs from risotto rices, such as arborio and carnaroli because it doesn’t make the creamy texture that you get with those rices.  For paella the rice must keep it form and have a drier texture. Paella is a Spanish rice dish specialty cooked in a large shallow pan. It is flavoured with saffron and will include chicken or seafood. The recipe may have ancient roots but it has been made in its current form since the mid-19th century.  It is the classic rural dish found on the east coast of Spain near the city of  Valencia.
