Only made in La Mancha Spain. Only made with milk from Manchega sheep. Viejo means it has been aged a minimum of 1 year. Traditionally Manchego was shaped in woven grass baskets which produced the distinctive zigzag pattern on its rind. Today those baskets have been replaced with molds that create the same historic pattern. Enjoy its distinct  creamy piquant flavour and firm buttery texture. This is a versatile cheese. Set it out with some fruit, almonds, hazelnuts or walnuts, rustic crackers or crusty bread. Offer your guests sun-dried tomatoes, olives, fig spread or some extra virgin olive oil to drizzle over their cheese and bread.
