Hungarian Mezeskalacs – gingerbread cookies

Almost every European culture has some form of gingerbread that are baked during the Christmas season. In Hungary Christmas cookies are traditionally decorated with intricate icing designs.  These particular un-iced gingerbreads are made by a small family run bakery in Hungary. They are perfect for trying out your decorating skills on. I am a bit of a gingerbread aficionada, probably because it is one type of cookie that I can usually eat on the nightshade free diet I need to follow. As soon I saw that these cookies have clearly listed basic ingredients that meet the needs of a nightshade free diet I was opening a package. Sinking my teeth into these mildly spiced honey cookies I got excited about the possibilities of a chai flavoured tiramisu dessert. Since both coffee and vanilla have been off limits for me, I have missed the delights of tiramisu and triffle for over a year.
