Resembling Danish royal porcelain, Castello Danish Blue Cheese enchants with tones of mild bitterness and salt. The flavors are pungent and sharp but the texture is creamy and smooth, on par with many soft cheeses.
Dairy farmers on the island of Funen in Denmark use traditional French recipes for making blue mold cheese. But goat’s milk has been replaced with cow’s milk making Danish Blue creamy and rich consistency. Milder than Roquefort it is preferred by people with sensitive palates. Melt Danish Blue over seared beef, veal or pork steak. Spoon it in soups, pastas or stews for an extraordinarily creamy consistency.
