Arrowroot flour/starch can be used wherever a recipe calls for tapioca flour. I use it as a substitute for potato starch in my gluten free bread recipe. It doesn’t absorb water quite as well as potato starch so using a bit of coconut flour as part of the required amount will compensate for that. Arrowroot is a binding flour. 454 grams
