Bob’s Red Mill “Sweet” White Sorghum Flour

This is one of my favourite gluten free flours to work with. Sorghum flour is considered a flavour flour. It offers a mild sweetness to baked goods compared to other gluten free flours like amaranth and buckwheat which have stronger flavours. Sorghum’s texture and ability to absorb moisture is similar to wheat flour. Whereas rice flour always will have a gritty texture because it doesn’t absorb moisture in the same way. I use sorghum flour in my breads, pancakes and biscuits.  454 grams
