This Dutch cheese is made from pasteurised cow’s milk. It is matured for at least 26 months in Beemster’s historic warehouses. Savour its deep, long-lasting flavours of butterscotch, whiskey and pecan. Do not be surprised if this deep golden cheese crumbles when you cut it. Expect the granular texture of an extremely old cheese. Be surprised: in spite of its full bodied flavour it has 20% less salt than other Dutch cheeses.
Set out this cheese with robust pumpernickel or rye bread. Offer your guests grapes, pears, pineapple and cherries. It is equally at home with dry reds or whites and most dessert wines. $4.99/100 gm
